What’s happening:
It’s called iridescence. When meat is sliced, light reflects off the muscle fibers and fat in a way that creates a rainbow effect (basically light diffraction). It’s common on ham, roast beef, corned beef, and turkey, especially under fridge or LED lighting.
When it’s fine:

Smells normal (just “meaty,” not sour)

Feels normal (not slimy or sticky)

Color underneath looks pink/normal for ham

Within the “use by” date and kept cold
