Preheat oven
Preheat oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top (optional but helps crisp the bacon). -
Prepare the bacon
Cut bacon slices into thirds. -
Wrap the sausages
Wrap each sausage with a piece of bacon and secure with a toothpick. -
Coat with sugar
Roll each wrapped sausage in brown sugar and place seam-side down on the baking sheet. Sprinkle with pepper or cayenne if using. -
Bake
Bake 25–30 minutes, turning once, until bacon is crispy and sugar is caramelized. -
Serve
Let cool slightly (they’ll be molten-hot!) and serve warm. Watch them vanish.
