Cajun White Chicken Chili

Instructions

  1. Cook the chicken
    Heat oil or butter in a large pot over medium heat.
    Season chicken lightly with salt and pepper. Cook until browned and cooked through. Remove, shred, and set aside.

  2. Build the flavor
    In the same pot, sauté onion and bell pepper until soft, about 4–5 minutes.
    Add garlic, Cajun seasoning, cumin, and smoked paprika. Stir for 30 seconds until fragrant.

  3. Simmer the chili
    Pour in chicken broth and add white beans. Bring to a gentle simmer.

  4. Make it creamy
    Stir in shredded chicken and cream. Simmer uncovered for 10–15 minutes, stirring occasionally, until thickened.

  5. Finish & serve
    Taste and adjust seasoning. Add lime juice if using.
    Serve hot with your favorite toppings.
