Prepare mashed potatoes
Boil potatoes in salted water until fork-tender. Drain, then mash with butter, milk, salt, and pepper. Keep warm. -
Bread the steaks
In one shallow bowl, combine flour, salt, pepper, paprika, and garlic powder.
In another bowl, whisk eggs with milk.
Dredge each steak in flour, then egg mixture, then flour again. -
Fry the steaks
Heat oil in a large skillet over medium-high heat. Fry steaks 3–4 minutes per side until golden and crispy. Remove and set aside. -
Make the gravy
In the same skillet, melt butter with pan drippings if using. Stir in flour and cook 1–2 minutes. Gradually whisk in milk and cook until thickened. Season with salt and pepper. -
Serve
Place chicken-fried steaks on plates, spoon gravy over the top, and serve with mashed potatoes on the side.
