Cook the pasta
Boil macaroni in salted water until just al dente. Drain and set aside. -
Make the cheese sauce
In a large saucepan, melt butter over medium heat.
Whisk in flour and cook 1 minute.
Gradually whisk in warm milk, stirring constantly until thickened. -
Add the cheese
Lower heat and stir in cheddar, mozzarella, and Parmesan until melted and smooth.
Season with salt, pepper, and paprika. -
Combine
Stir cooked macaroni into the cheese sauce until fully coated. -
Bake
Pour into a greased baking dish.
Top with buttered breadcrumbs if using.
Bake at 350°F / 175°C for 25–30 minutes until bubbly and lightly golden. -
Serve
Let rest 5 minutes before serving.
