Prep the jalapeños
Slice jalapeños lengthwise and remove seeds and membranes (leave some if you want more heat). -
Make the filling
In a bowl, mix cream cheese, shredded cheese, garlic powder, paprika, salt, pepper, and optional chives. -
Fill
Spoon or pipe the cheese mixture into each jalapeño half. -
Wrap
Wrap each stuffed jalapeño with a half slice of bacon. Secure with a toothpick if needed. -
Bake
Preheat oven to 400°F (200°C).
Place poppers on a wire rack over a baking sheet.
Bake 20–25 minutes, until bacon is crispy. -
Serve
Let cool slightly—then watch them disappear.
