Simmer the Brats
Place brats in a large skillet or pan.
Add beer, sliced onion, garlic, butter, and pepper.
Bring to a gentle simmer (do NOT boil). -
Cook Gently
Simmer for 10–12 minutes, turning once.
The brats should be cooked through but still pale. -
Grill for Finish
Transfer brats to a hot grill.
Grill 2–3 minutes per side until nicely browned with light char marks. -
Toast the Buns
Lightly butter buns and toast them on the grill for 30–60 seconds. -
Serve
Serve brats in buns and top with the beer-simmered onions.
