GRANDDAD’S CLASSIC POT ROAST

Ingredients

  • 3–4 lb beef chuck roast

  • Salt and black pepper, generously

  • 2 tablespoons oil

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 4 carrots, peeled and cut into chunks

  • 4–5 potatoes, cut into chunks

  • 2 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Optional: 2 tablespoons tomato paste
