Sear the roast
Season roast well with salt and pepper.
Heat oil in a large pot or Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned. Remove and set aside. -
Build the flavor
In the same pot, add onions and cook until soft and lightly golden. Add garlic and cook 30 seconds. Stir in tomato paste if using. -
Slow cook
Return roast to the pot. Add carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary. Liquid should come about halfway up the meat. -
Cook low and slow
Cover and simmer on low for 3–4 hours (or bake covered at 325°F / 165°C), until the meat is fork-tender. -
Serve
Slice or shred the beef and serve with vegetables and plenty of gravy.
