GRANDDAD’S CLASSIC POT ROAST

Instructions

  1. Sear the roast
    Season roast well with salt and pepper.
    Heat oil in a large pot or Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned. Remove and set aside.

  2. Build the flavor
    In the same pot, add onions and cook until soft and lightly golden. Add garlic and cook 30 seconds. Stir in tomato paste if using.

  3. Slow cook
    Return roast to the pot. Add carrots, potatoes, beef broth, Worcestershire sauce, thyme, and rosemary. Liquid should come about halfway up the meat.

  4. Cook low and slow
    Cover and simmer on low for 3–4 hours (or bake covered at 325°F / 165°C), until the meat is fork-tender.

  5. Serve
    Slice or shred the beef and serve with vegetables and plenty of gravy.
