Brown the sausages
Heat olive oil in a large skillet over medium heat.
Add sausages and brown on all sides (about 8–10 minutes). Remove and set aside. -
Cook peppers and onions
In the same skillet, add onions and peppers.
Cook until soft and lightly caramelized, about 8–10 minutes.
Add garlic and cook 30 seconds. -
Season
Sprinkle with salt, pepper, oregano, and red pepper flakes if using. -
Combine and simmer
Return sausages to the pan.
Add tomato sauce if using.
Cover and simmer on low for 10–15 minutes until sausages are fully cooked and juicy. -
Serve
Serve hot in rolls, over pasta, or with potatoes.
