Season the chicken
Pat dry and season with salt, pepper, paprika, and Italian seasoning. -
Sear
Heat oil or butter in a large skillet over medium-high heat.
Sear chicken 4–5 minutes per side until golden. Remove and set aside. -
Build the sauce
In the same pan, add garlic (and mushrooms if using).
Cook 30–60 seconds until fragrant.
Pour in chicken broth, scraping up all the browned bits. -
Make it creamy
Stir in cream and Parmesan.
Simmer gently until slightly thickened. -
Finish
Return chicken to the pan.
Simmer 8–10 minutes until cooked through.
Stir in spinach if using (it wilts fast). -
Serve immediately
Because leftovers are… unlikely.
