Taco Stuffed Baked Potatoes

Instructions

1. Bake the potatoes
   Preheat oven to 400°F (205°C).
   Scrub potatoes, poke a few holes with a fork, and bake directly on the oven rack for 50–60 minutes, until tender.

2. Cook the taco meat
   While potatoes bake, brown ground beef in a skillet over medium heat.
   Drain excess grease, then stir in taco seasoning and water.
   Simmer 5–7 minutes until thickened.

3. Assemble
   Slice each baked potato down the center and fluff the inside with a fork.
   Season lightly with salt and pepper.
   Spoon taco meat into each potato.

4. Add cheese & melt
   Sprinkle cheese on top and return potatoes to the oven for 5–10 minutes, until melted.

5. Top & serve
   Add your favorite toppings and serve hot.
