Bake the potatoes
Preheat oven to 400°F (205°C).
Scrub potatoes, poke a few holes with a fork, and bake directly on the oven rack for 50–60 minutes, until tender. -
Cook the taco meat
While potatoes bake, brown ground beef in a skillet over medium heat.
Drain excess grease, then stir in taco seasoning and water.
Simmer 5–7 minutes until thickened. -
Assemble
Slice each baked potato down the center and fluff the inside with a fork.
Season lightly with salt and pepper.
Spoon taco meat into each potato. -
Add cheese & melt
Sprinkle cheese on top and return potatoes to the oven for 5–10 minutes, until melted. -
Top & serve
Add your favorite toppings and serve hot.
