Texas Chili (No Beans)

Ingredients

  • 2 lbs beef chuck, cut into small cubes

  • 2 tbsp beef fat or oil

  • 1 large onion, finely chopped

  • 4 cloves garlic, minced

  • 2 tbsp chili powder (pure chile-based if possible)

  • 2 tsp ground cumin

  • 1 tsp smoked paprika

  • ½–1 tsp cayenne (to taste)

  • 1 tsp dried oregano

  • 2 cups beef broth

  • 2 dried ancho chiles, soaked and blended (or paste)

  • Salt and black pepper

  • Optional: 1 tsp cocoa powder or splash of black coffee (traditional depth)
