Texas Chili (No Beans)

Instructions

  1. Brown the beef
    Heat fat in a heavy pot over medium-high heat.
    Brown beef in batches until deeply caramelized. Remove and set aside.

  2. Build the base
    Lower heat. Add onion and cook until soft.
    Add garlic and cook 30 seconds.

  3. Toast the spices
    Stir in chili powder, cumin, paprika, cayenne, and oregano.
    Cook 30–60 seconds until fragrant.

  4. Simmer
    Return beef to the pot.
    Add beef broth and chile puree.
    Bring to a low simmer, cover partially, and cook 2–3 hours, stirring occasionally, until beef is tender and chili is thick.

  5. Finish
    Season with salt and pepper.
    Add cocoa or coffee if using. Simmer uncovered 10 minutes.
