Brown the beef
Heat fat in a heavy pot over medium-high heat.
Brown beef in batches until deeply caramelized. Remove and set aside. -
Build the base
Lower heat. Add onion and cook until soft.
Add garlic and cook 30 seconds. -
Toast the spices
Stir in chili powder, cumin, paprika, cayenne, and oregano.
Cook 30–60 seconds until fragrant. -
Simmer
Return beef to the pot.
Add beef broth and chile puree.
Bring to a low simmer, cover partially, and cook 2–3 hours, stirring occasionally, until beef is tender and chili is thick. -
Finish
Season with salt and pepper.
Add cocoa or coffee if using. Simmer uncovered 10 minutes.
