Cook the potatoes
Boil potatoes in salted water until fork-tender. Drain well. -
Mash and mix
Mash potatoes while hot. Stir in butter, sour cream, salt, and pepper until creamy. -
Add the good stuff
Fold in cheddar cheese, bacon, and green onions. -
Bake
Spread into a greased baking dish. Top with extra cheese if desired.
Bake at 375°F (190°C) for 20–25 minutes until bubbly and lightly golden. -
Serve
Serve hot—and prepare for compliments.
